Why this must be read: I would recommend all of MarbleGlove's fics. But, since I have to choose just one crossover, Death & Betrayal is sure to please both Highlander and Harry Potter fans.
This fic explores a really unique idea, that the sheer weight of Methos' history gives him a sort of mystical 'presence' that affects the magical world. I love the fact that Methos isn't all powerful and Severus is not an Immortal (my biggest pet peeve with Highlander crossovers is how everybody and their brother tend to end up being Immortal). In this fic, Methos mentors a bitter, angry Severus and the results are a really great read.
