The “Just Between” series by G. L. Dartt (varies, up to NC-17)
Fandom: STAR TREK: VOYAGER
Pairing: Janeway / Seven
Author on LJ: Unknown
Author Website: Novel Expectations
Why this must be read: This is an amazing series of stories, spanning 5 seasons of 10 stories each, that begins in the middle of Season 4 of the Voyager series as televised. While it generally follows the events of various episodes, at least at first, it also considers the growing relationship between Janeway and Seven, and how they would react to events. So it definitely veers into AU territory as time goes on.
These stories are well-written, very funny, and feature very hot sex scenes as well (just wait for the introduction of the “accessory” in later stories). They also read like an authentic lesbian relationship – lots of emotional confusion and processing takes place, but in an enjoyable way. In fact, these stories are so good that at some point I stopped watching Voyager altogether and just read these stories instead as they were posted! So I can’t attest to how well they match canon in later episodes, but this also shows how well they stand alone for folks who have a vague familiarity with the Voyager crew and plot, but didn’t watch the show regularly.
There’s also a sequel series, in progress, called “Millennium”, that follows the future adventures of Janeway, Seven, and crew after they successfully return to the Alpha Quadrant. Stories are posted to this series on an occasional basis.
